Usually, a tap beer that is mostly foam on top means something went wrong with the pour.

But at a few Milwaukee breweries, those most in the know are not only enjoying foamy beers — they're ordering them.

They're called mlíko, or "milk," pours, and they're part of a growing trend in the American brewing scene. The pours, which consist of several inches of foam on top of the liquid beer, originated in the Czech Republic.

Earlier this year, the New York Times touted the growing trend in the U.S. But a few Milwaukee breweries, especially those that specialize in European pilsners and lagers, are already ahead of the curve. They've been serving beer like this for years.
